Breakfast Sammy....


This picture does not do it justice. Its soooooo good.

Ingretients:
Whole wheat english muffin
2 eggs
cheese( i used feta)
4 oz of turkey breast lunch meat
non-stick spray
salt and pepper
butter or onion chive cream cheese

Directions:

  1. Spray pan with non-stick spray. Put lunch meat in pan in order to warm it up.
  2. Crack eggs. I enjoy my eggs fried but do them the way you like. Use salt and pepper to taste. Cook and flip eggs when almost done top with cheese of your choice. Put lid on skillet in order to help cheese to melt.
  3. While your doing this toast your english muffin.
  4. Put either the butter or cream cheese on your english muffin and the the top with eggs and meat.

Dijon Chicken Smothered in Mushrooms

Ingretients:


4 boneless skinless chicken breasts (about 1 lb)
1/4 cup Gold Medal® all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive or canola oil
1/2 cup roasted garlic-seasoned chicken broth (from 14-oz can)
1 jar (4.5 oz) Green Giant® sliced mushrooms, drained
1 1/2 tablespoons Dijon mustard
Chopped fresh thyme, if desired

  1. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat or rolling pin until about 1/4 inch thick. In shallow pan, stir together flour, salt and pepper.
  2. In 12-inch nonstick skillet, heat oil over medium-high heat. Coat both sides of chicken with flour mixture. Cook chicken in hot oil 6 to 8 minutes, turning once, until chicken is no longer pink in center. Remove chicken to serving plate; cover to keep warm.
  3. Stir broth into skillet. Heat to boiling over medium-high heat. Stir in mushrooms and mustard. Cook 2 to 3 minutes, stirring frequently, until slightly thickened. Spoon sauce over chicken. Sprinkle with thyme.
I added in my thyme with the flour mixture. But its up to you. I also used fresh mushrooms and some yellow onions because I love mushrooms and onions together. Joshua loved making this with me. As you can see.

Taco Tuesday

Every Tuesday in our house we have tacos. I hope enjoy our first post.

Chicken tacos with red onion and roman lettuce

Ingredient:
Corn tortillas
Shredded chicken(remove skin)
Red onion, minced

Optional:
Lime
Shredded cheese( we use feta or skim milk mozzarella.
Salsa(green salsa is best)

Shred chicken and set aside. Head tortilla in a large skillet. You can place them in a dish towel to keep warm. Take tortilla and top with chicken, onion, cheese. Top to your liking. I did some Spanish rice to go along with it. You could also make corn or black beans. Hope you enjoy this.

Excited to start this with my mom. Its gonna be a very intresting journey. I hope that this is as good of an idea as we both thought. A good way to connect across thousands of miles. Missing eachother but connecting through food. Love you mom
