Turkey Meat Loaf


1-2 (1 to 1 1/2 lbs) packages extra lean ground turkey
2 eggs
packaged bread crumbs
barbecue sauce
1/2 cup green bell pepper
1/2 cup onion
1/2 cup mushroom
 
 

Combine meat, eggs and barbecue sauce to your liking. Mix well. It's easiest to do with your very own hands! Add other ingredients, some like less some may like more!
Slowly add bread crumbs to thicken the loaf.
Be careful - adding too much will mean you'll need to add more egg and barbecue sauce.
Bake until thoroughly cooked usually about 45 minutes at 350°F. But keep an eye on it as it is extra lean so it cooks faster and will dry up. Makes great sandwiches the next day on a French roll with extra barbecue.

Lunch Pita

Ingredients:

Lunch meat
Lettuce
Condiments
Cheese
Onion
Pita bread
Pickle

Directions:

1.      Heat oven to 450 and place lunch meat in baking dish. Top with cheese and place in oven.
2.      Place pita in oven as well so that it can heat up.
3.      After lunch meat and pita are heated pull them out of the oven. Chop pita in half and stuff meat inside.
4.      Place lettuce, onion, pickle and any other topping you like. Drizzle with mustard or the condiment or your choice.

Mushroom Chicken


Ingredients:

½ lb Mushrooms
1 White onion
Boneless/Skinless chicken
Lemon pepper season

Directions:

1.      Season chicken with lemon pepper and a bit of salt. Heat skillet to med high. Place chicken in skillet and brown on both sides.
2.      While chicken is cooking chop up onion and mushrooms. Remove chicken and place on the side. Add oil to skillet and tosh in veggies. Sauté until they begin to brown. About 4-6 min.
3.      Once done place chicken on plate and top with mushroom and onion mixture. I served with yellow rice and corn.

BBQ Chicken Sammy

This is a quick and easy meal. When you have nothing planned out.

Ingredients:

Shredded chicken
Lettuce
Cheese
Bread or bun
Condiments
bbq sauce

Directions:

  1. Turn on oven about 350. Get a baking dish and place chicken with bbq sauce on top. As much as desired. Allow chicken to warm and bbq sauce to soak up in the chicken
  2. Toast bun and but on desired toppings.
  3. Turn off oven and pull out chicken and top with cheese. Place back in oven to melt cheese. About 3-4min.
  4. Pull out chicken and place on bread.

Nutter Butter Calls

If you like peanutbutter you will love these

1 pkg. Nutter Butter cookies (broken… use cookie with the cream center)
1 8oz. package cream cheese (softened)
chocolate bark

Directions:
1. Finely crush all but 5 cookies in a food processor or place them in a ziploc bag and crush into a fine consistency.
2. Combine with cream cheese. Use the back of a large spoon to help mash the two together.
3. Roll the mixture into 1″ balls and place on wax paper covered cookie sheet.
4. Melt chocolate as directed on the package and then dip balls into chocolate, tap off extra and set aside on wax paper covered cookie sheet to dry.
5. Once dry, refrigerate and enjoy

Chicken Carbonara

This was a little scary to make with the raw egg and all but it came out so good. Joshua ate two bowls and we both loved it.

Ingredients:
1lb Rigatoni or whatever pasta you like
2 baked or grilled pieces of chicken chopped or shredded
1 med yellow onion
2 cloves garlic
1 egg
Salt and pepper to taste
Shredded cheese to top

Directions:
  1. Bring a large pot of salted water to a boil. Cook pasta until al dente.
  2. While pasta is cooking heat large skillet on med heat. Chop onion and garlic and sauté in pan until tender. Season with salt and pepper. Add chicken to mixture.
  3. Drain pasta and reserve about a cup of the pasta water. Add pasta directly to sauté pan. Toss together with meat and onion mixture. Stir in pasta water so that a small amount of moisture clings to pasta.
  4. Remove from heat and crack egg directly into the pan. Using tongs toss so that the egg is evenly distributed. Serve in bowl and top with shredded cheese.
